- Make sure all employee drinks have a lid and straw and are stored away from food storage and food prep areas.
- Make sure tortillas produced on site and packaged for retail sale are properly labeled if set out for public access. Four twelve count packages of tortillas were observed in retail (public access) storage shelfs without any labeling.
- Make sure paper towels are available at both bakery employee hand washing sinks during times of operation.

- Observed open can of soda on prep table in front area of bakery. Oobserved clothing items, and caps, on prep table and hanging off rack with food items. Ensure that all personal food items, such as beverages and personal foods, are stored in an area away from food and food contact surfaces. Ensure that personal beverages are stored in a cup with a lid and a straw to prevent cross contamination. (bottled and open canned beverages should not be used)
- At beginning of inspection, paper towels were not provided at hand sink. Ensure that hand sinks are provided with paper towels at all times for proper hand washing procedures to occur.
- Observed plastic bin storing clean utensils, to be dirty. Ensure that utensils and dishware are air dried prior to storing away, to prevent pooling water and debris. Ensure all surfaces where clean dishware and utensils are stored are properly cleaned and sanitized, and maintained in good cleaning status.
