- 229.164 (o) (7) (A) consume by date (prepared). Found cooked meat products inside of WIC, they were frozen but still did not have time and date labels on them. Even when food product is placed inside a freezer, it still needs to be labeled properly with the time and date prepared, to insure that establishment is properly following the FIFO, method. Or establishment must have an approved and documented HACCP plan for the storage of meat products.
- 229.166 (g) (4) (B)backflow preventer. Observed many water nozzles with hoses attached to them, and they did not have backflow prevents on them. Must install backflow preventers on these nozzles to prevent a cross connection.
- Establishment must always have at least one person on duty with a Food Managers Certification. Only person on duty with a certification, was not on site, instead was on lunch break, outside of establishment. Person with certification must be on site, during all hours of operation.
- 229.165 (b) (1) (A)non absorbent. Establishment is placing card board on floor inside WIC. Card board must be kept clean, inside WIC, cardboard is dirty and in need of changing out. In addition, floors inside WIC, need to be cleaned.
