- Observed employee eating in meat preparation cooler room, near preparation tables. Ensure eating is only done in designated areas away from food and food preparation surfaces to prevent any cross contamination.

- 1. Foods should not be stored under shelves for stocking. 2. Cardboard should not be used as a liner for shelving. Inspector found mildew on cardboard used as liner under milk cartons. 3. Prep table in produce preparation area should be cleaned to protect against cross-contamination. 4. Styrofoam containers with raw meat should not be stacked on top of each other while waiting to be wrapped.
- Hand sink in meat department has no hot water. Hot water at hand sink is less than 110 degrees. Water in three compartment sink in meat department does not get hot enough. There is no backflow preventer present where hose is connected in meat department.
- The water does not become hot at the handwash sink in the meat department.
- 1. Cleaning supplies stored next to strofoam containers used for meat. Cleaning supplies should be stored away from food contact surfaces. 2. Employee found washing meat mixer next to packages of raw meat. Cleaning solution was found spraying onto packages of meat. Cleaning should take place away from meat to prevent contamination from chemicals.
- Manual ware washing temperature less than 171°F. Water at three comartment sink does not get hot enough for manual warewashing. Wash dishes manually at 171 degrees or above.
- 1. Knife used at meat cutting station used to clean another meat preparation utensil and then wiped on apron of employee to clean it. Kives and other utensils should only be used for their intended purpose and cleaned according to proper warewashing procedures.
