- Observed open bottles of water on tortilla prep table during the time of inspection. Employees must drink from clean, closed beverage containers with clean hands and away from food prep areas.

- Provide soap and paper towels to be available at the hand sinks at all times. The kitchen hand sink did not have soap or paper towels.
- Discontinue storing personal medicine on the prep table. toxic items shall be stored away from food and food products. (IB tablets)
- Provide for all dishes to be washed properly. Wash in hot soapy water- Rinse in clear rinse water-Sanitize in bleach and water 50-100ppm. The employee placed soap and bleach in the same compartment.

Observed rice stored directly in a HEB like bag and observed tortilla rack being stored directly in a trash bag. Provide for the all utensils to be in good repair. Remove the damaged knife.

- Discontinue allowing employees to drink from open containers in the kitchen. Drinking cups shall be a cup, lid and a straw. Several open cups of coffee were sitting on different prep tables. Discontinue allowing employees to eat in the kitchen. Plate of food was sitting in the tortilla area.
- Provide documentation that handling of ready-to-eat foods with bare hands is accomplished using two or more of the following safeguards: double hand washing, nail brushes, a hand sanitizer, incentive programs for sick employees not to work, or control measures approved by the regulatory authority. Observed the line cook handling tacos with bare hands and the staff making tortillas handled them with his bare hands. Once the inspector arrived the gloves were used. The gloves shall be used at all times.
- Provide for all hand washing sink to have soap and paper towels to be available at all times. The women's restroom did not have paper towels, the ice machine hand sink does not have either, the employee restroom does not have either.

- Discontinue storing personal medicines in the same container as the food that is offered to the public. Store personal items away from food and food products so that this items do not become contaminated. (Pepto was stored with mole and chili peppers in the tray of a cooler) (Purse was hanging on the rack containing food products and this same Purse is over the prep table.)
- Discontinue allowing employees to handle ready to eat food items with bare hands without the proper documentation. Upon entering the kitchen the staff was handling cheese with their bare hands. When the employee saw the inspector they placed the gloves on their hands. If the establishment decides to use gloves then the documentation is not needed.
- Discontinue storing raw shell eggs over the cooked products. Eggs shall be stored below all ready to eat, cooked food items.
