  • Observed an employee pouring a drink down one of the had wash sinks. Discontinue this practice; pour left over drinks down ware-wash sink.
  • During ware wash, observed that employee did not properly wash, rinse, and sanitize soiled items. Provide for soiled items to be properly washed, rinsed, and sanitized before being used again in food service and prep.
  • Observed that many of the fryer baskets, and serving trays were caked with old food and oil residue. If these items cannot effectively be washed, rinsed, and sanitized provide for these items to be replaced.
