- Found two aluminum packets of barbacoa sitting out at a temperature of 118 degrees F. Employee stated that these items had been out for about 30 minutes. Allowed establishment to keep these food items but they must be reheated to 165 degrees F prior to being served to customers or put on steam table.
- Packages of tortillas and chicharrones were not properly labeled. Each individually packaged food item must be labeled with the name and address of the establishment that manufactured and packaged them, the common name of the food item, and a list of ingredients.
- Observed several flies in the establishment. Eliminate the presence of insects by using any approved means.
