  • Discontinue using broken/chipped wares.
  • Ensure that all food contact surfaces are clean and in good conditions such as shelving in walk in coolers, under metal shelving in meat room, etc.

  • Observed degreaser stored over prep line. Store toxic chemicals away from food areas (storage/preparation).
  • Clean mold and debris off of ice scoop holders and ice storage lids. Clean mold off of margarita machine dispenser.
  • Repair leak at hand sink near walk in cooler/freezer.

  • Hot water was not available at any hand sinks at time of inspection. Manager was able to obtain hot water before the end of the inspection. Provide for hot water to all service sinks/hand sinks of at least 100 degrees F.
  • Observed plastic food stoarge bins and lids cracked. Observed metal ice scoop chipped. Discontinue using broken/chipped wares.

  • Observed plastic lids with cracks/chips holding flour/sugar/ect. Discontinue using broken/chipped wares.
  • Observed mold, rust, and food debri in containers holding bar glassware. All food contact surfaces must be in good condition and clean.
  • Observed mold on ice scoop holders. All food contact surfaces must be in good condition and clean.
  • Margarita drink machine has slight mold near spout. . All food contact surfaces must be in good condition and clean.

  • At time of inspection, there was not a backflow preventer on the mop sink faucet. Ensure the mop sink faucet is equipped with a back flow preventer.
  • At time of inspection, hand sinks did not have hot water above 96 degrees F. Ensure all hand sinks have hot water of at least 100 degrees F.
  • Far right drain pipe from the ice machine does not have an adequate air gap. Ensure there is an air gap that is at least 2x the diameter of the pipe between the top of the floor drain and bottom of the pipe.
  • Observed a leak at pipes from hand sink located in the meat cutting room. Ensure the leak is repaired.

  • The 2 hand sinks near the bread station and the bathroom sinks had hot water of 96-98 degrees F. Ensure al hand sinks have hot water of at least 100 degrees F. Refrain from using hand sinks by bread station until hot water is at proper temperature. Ensure to use hand sinks located in other areas of kitchen.
  • Observed 2 drain pipes at the ice machine without an air gap. Ensure there is an air gap between the bottom of the pipe and top of the drain that is at 2x the diameter of the pipe.
  • Observed strainer with frayed edges stored with clean wares. Ensure all wares are ingood repair. Corrected on site.

  • Utensils such as spatulas and wire strainers including wire fry baskets must be in good repair.
  • Lemon slicer and onion slicer are stored with dried food on the blades.
  • Clean the underside of the blender and Margarita machine dispenser.
  • Clean the bottom shelf of the reach in coolers in the bar where the milk is stored and clean the broken glass from the reach in where the glass mugs are stored.
  • Provide a thermometer for the reach in cooler to the left of the ice cream freezer.

  • Label information shall include, if made from more than 2 ingredients, a list of ingredients in descending order of predominance by weight, including a declaration of artificial color or flavor and chemical preservatives, if contained in foods.
  • Properly label all spray bottles, legibly write labels on bottles, discontinue to use spray bottles if label is different from contents inside bottle.
  • Chapter 13 Article VI Take your current Food Managers Certificate and obtain a valid and current food manager's certificate issued by the director of the SA Metro Health Dept which can be purchased at 1901 S. Alamo.
  • Replace the broken thermometer in thereach in cooler
  • Observed stored vegetable slicer with food debris, ensure that equipment is properly cleaned.
  • Observed torn spatulas and melted insert lids. Food contact equipment must be in good repair.
  • Clean the soda gun holster.
