    Observation: Food stored on the floor and/or food stored less than 6 inches off the floor.
    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
  • Critical: Date Marking of Refrigerated, Ready-to-Eat PHF (TCS Food) (corrected on site)
    Observation: The following ready-to-eat food that is made using a combination of ready-to-eat, potentially hazardous ingredients is not properly dated for discard using the date of the first-prepared ingredient: cooked shrimp, cooked pork and cooked duck in Avantco 2dr cooler made on 2/27
    Correction: Refrigerated, ready-to-eat, potentially hazardous food (time/temperature control for safety foods) that combined with additional ingredients, or portions of the same food, must retain the date marking of the earliest or first prepared ingredient. CFM labeled all items with the preparation date
  • Food Temp Meas Device, Calibrated
    Observation: The food temperature measuring device was found out of calibration in the range of use.
    Correction: Food thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. It is suggested that food thermometers be calibrated at least once a week in a cup completely filled with ice and cold water to a temperature of 32°F or calibrated in a pot of boiling water at 212°F.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment.

The purpose of this visit is to conduct a risk factor assessment.
Keep the hand sink free and clear to encourage easy access to hand washing.
Hand washing is a preventative measure to limit food borne illnesses.

  • Handwashing / Where to Wash (corrected on site)
    Observation: A food employee was observed cleaning their hands in a food preparation sink.
    Correction: ALL food employees shall wash their hands in ONLY a designated handsink. EMPLOYEE WASHED HANDS AT THE HAND SINK.
  • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: The handwashing facility located BY THE THREE-COMPARTMENT SINK is blocked, preventing access by employees for easy handwashing.
    Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use. EMPLOYEE REMOVED ALL ARTICLES BLOCKING ACCESS TO HAND SINK.

**Approval is hereby granted for the issuance of a Health Department Permit. This inspection report shall serve as your permit until the official permit is received. All outstanding violations are to be corrected within ten (10) days but no later than the time of your first routine inspection (approximately 30 days). Equipment additions/replacement/changes are not allowed without Health Department approval.**
IMPORTANT:
*Food items may not be made at home and brought to the facility for sale. All food items must be obtained from an approved source, which is subject to regulation.

Note the following recommendations:
It is recommended that more than one person on staff be a Certified Food Manager. A Certified Food Manager must be on the premises during ALL food preparation and service.
It is recommended that a monthly pest control program be implemented. Maintain records of pest control treatments for Health Department review.

    Observation: The outdoor dumpster has no drain plug.
    Correction: Obtain a drain plug for the dumpster.
