Observation: Fried rice hot holding at improper temperatures in the hot box on the hot line.
Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.Item had just been delivered by a catering company which could have contributed to the drop in temperature. Item was rapidly reheated to 165

Observation: No written procedures for the use of time as a public health control with potentially hazardous foods. Time control is used for the pizza station and the self service salad station
Correction: Provide written procedures for the use of time as a public health control. The procedures must include the following steps or practices: a. Food must be marked with the time within which it must be cooked, served or discarded. b. The food is served or discarded within four hours from the time when the food is removed from temperature control c. Food in unmarked containers or packages, or for which the time expires is discarded and d. Written procedures are maintained in the food establishment and made available to the regulatory authority upon request e. Once time is implemented as a control measure for potentially hazardous food, no other measures may be substituted.
- Physical Facilities in Good Repair (corrected on site)
Observation: Hot holding cabinet temperature gauge, 2 door stand up cooler on the line thermometer, and pull out drawers under grill thermometer were not properly working
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Engineering department was contacted to come out and repair said items

Observation: Several foods on hot plates and in steam table were at improper temperatures.
Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
- Handwashing Lavatory, Water Temperature, and Flow
Observation: Water from the handwashing sinks was measured at a temperature less than 100°F.
Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.Correct by 10/29/2014.

Received a complaint on 10/22/2014 that the OJ dispensing machine was spitting out fruit flies. During my routine inspection I checked all 4 beverage dispensing machines and did not see any insects in or near the machines.
