Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below. Repair or replace cooling units that are unable to maintain potentially hazardous foods at 41F or below to inhibit the growth of harmful bacteria.
Comments:
1) Observed proof of new menu. Consumer advisory is adequate on new menu.
2) Maintenance person for refrigeration was called during inspection. Hobart 2-Door Cooler needs to be serviced to ensure that potentially hazardous foods (items that need temperature control for food safety).
3) Observed Time as a Public Health Control practices in place.

Notes:
1) Remember to keep rwa shell eggs in the cooling units at all times.
2) Remember to keep the water in the dipper well for ice cream running at a sufficient velocity to remove particulates at all time when a scoop is in the well.
3) Dishwasher was properly sanitizing at the time of inspection.

Hobart 2-Door Cooler should continue to be monitored.
Cooling process should be monitored to ensure that the food cools from 135°F to 70°F within 2 hours; then from 70°F to 41°F within 4 additional hours.

Salad Bar is kept cold using ice. Suggest not filling food to top of containers and also using more ice. Food today was 48 degrees F.
Sanitizer bucket 100PPM - good
According to 0820, coolers must maintain 41 Degrees F or below by 3/07 and 1370 an alarm must be installed indicating when sanitizer is empty at auto-dishwasher. Bathroom and dining area okay. Fire suppression checked 08/05, Ehrlish does pest control. Good job date marking. Remember all coolers must have thermometers.

Noted that non-food grade gloves were stored in food prep and handleing areas. Non-food grade gloves may only be used to clean the facilty and may not be used to handle raw or ready to eat foods.
