Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 140F and the container.

6.5 Floors in the halls and cells all need scraping and painting with epoxy paint so they are cleanable.

6.8 Several plumbing problems found. The women's cell area has sinks that do not work. The drain for the shower is clogged up.
The men's cell on the top floor has a sink with no hot water. One of the men's cells on the bottom floor has a shower that had no
pressure until it was adjusted. Most all of the showers have strings made with pieces of sheets used to adjust the temperature.
Only a cleanable handle should be used for this purpose. All shower need scraping and painting so they are cleanable as does the
area around the sinks and toilets. A few of the showers will not stay on more than a few seconds.

Obtain a chlorine test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
