Discussed the following with the person in charge (PIC):
1. Detail clean all apple slicers. Observed build-up of debris around the blades.
2. Eggs are no longer served at this facility. Observed pasteurized juice served. All meats and poultry are purchased precooked.
3. Ensure that all employees (including teachers that serve the food) are familiar with the employee health policy. Observed the policy (FDA Form 1-B) posted in the kitchen. Recommend reviewing the policy with the staff and then have each staff member sign a copy of the policy verifying that they have read and understand the policy.
4. Food sources are Richmond Restaurant Service and Lovings Produce.
Observed the overall facility very clean and well maintained.

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed green beans and salsa in the refrigeration unit were not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the reach-in cooler is in poor repair.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: The quat sanitizer (quat tablets) being applied to food contact surfaces is too strong and does not meet the requirements of 40 CFR 180.940. The concentration was between 300-400ppm.
    Correction: Utilize only quat sanitizers that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. The required concentration is 200ppm.

PIC states milk had been out of refrigeration for snacks at 9:30 AM to 10:00 AM. Recommend foods be checked for temperature at start of day. Distributed form 1-B on Employee Health.

    Observation: Observed Lysol disinfectant (+400 ppm Quat) used on food counters for cleaning and disinfecting.
    Correction: Recommend disinfectant solution (less than 400 ppm Quat or Chlorine 50-200 ppm) be used to clean/disinfect food contact surfaces.
  • Refuse - Covering Receptacles
    Observation: Observed dumpster side door not closed.
    Correction: Recommend dumpster be tightly closed to prevent insect infestation.

Milk recently out of RIC for snacks. Menu corn dogs, tater tots, applesauce, milk. Director Jackie Mayfield. PIC scheduled to receive additional food service protection courses which will lead to ServSafe certification. Hand washing and glove use observed. Observed food containers not labeled as to contents. Recommend all food containers be labeled (Corrected). Observed thermometers not available in RIC and RIF. Recommend thermometers be available in all cooling units.

    Observation: Observed food manager not aware of all employee health signs/symptoms to restrict/exclude from food handling duties
    Correction: Recommend employee receive additional training and education.
