Observation: Slices of pie observed in bottom of undercounter refrigerator at drive through area stored in pool of condensate.
Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings. Will store all food on upper shelves until unit can be repaired to ensure condensate does not collect in bottom and either evaporates or drains from unit. Also corrected by discarding pie stored there.

Observation: Frozen condensate collecting around door to walk in freezer. Operator has a work order in to repair/replace floor in this unit to ensure condensate drains or evaporates from unit
Correction: Repair/Relocate the unit so condensate drains or evaporates from unit line to prevent incidental contamination of food stored there.

Chlorine sanitizer at proper concentration of 100ppm at 3 compartment sink. Left handouts for operator on employee health policy and Norovirus prevention measures.
- Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site)
Observation: The comminuted or ground beef (hamburger) was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria. It was checked after cooking in broiler and found at 139-142oF.
Correction: Continue to cook the meat to heat all parts to 155°F or above for 15 seconds, 145°F for 3 minutes, 150°F for 1 minute, or instantaneously at 158°F. Operator reset broiler and was rechecked and found at 156-165oF. Operator will monitor more frequently the cooking temperatures at the broiler.
- Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
Observation: TCS food in walk in cooler cold holding at improper temperatures including all dairy foods, uncooked bacon, All observed at 46-7oF internal product temperature.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Operator further agreed to monitor food temperatures in all refrigeration more frequently than once in the morning. He also agreed to have the unit repaired today and fax a repair invoice to the health dept. at 434-972-4310 by close of business today to ensure walk in cooelr can maintain proper food temepratures. The facility appeared to have adequate refrigeration for the day in undercounter units all appearing to be holding air temperatures of 37-8oF but there is no room for backstock.

Observation: @PLUMBING@ in poor repair. Drain from hot water heater is draining on floor and needs to be plumbed through piping as wastewater. Faucet at rear handsink is dripping and needs repair.
Correction: Repair and maintain all plumbing components ans fixtures.

Correction: Repair the condensate drain line to prevent incidental contact with foods. If the water collected there is from cleaning ensure that staff remove any excess water collected there.

Generally, facility appeared to be clean and well ordered. Staff monitoring food temperatures regularly and maintaining written log. Good system for using time as a control with either stickers with clock or timer above both indicating discard times for many TCS foods held on cook line. Chlorine sanitizer concentration in wiping cloth bucket at proper concentration of 75ppm-in 3-compartment sink at 100ppm.
- Sewage - Other Liquid Wastes and Rainwater (repeated violation)
Observation: Frozen condensate building up on and around door to walk in freezer. Condensate needs to drain or evaporate from unit. Unit can drip condensate waste directly onto the floor of the walk in freezer or contaminate food.
Correction: Repair/replace the door or threshold to ensure condensate drains or evaporates from unit to prevent liquid waste discharge onto the floor surface or onto food.

Observation: Less than 10 foot candles of light was noted in the walk in refrigerator.
Correction: Replace or upgrade lighting in walk in cooler to provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
