Discussed rusted shelving in walk-in. Recommended contacting shelving company for recommendations on cleaning and rustproofing shelving used in a walk-in cooler.
Facility overall cleanliness MUCH improved. Continue to monitor and clean shelving, walls, floors, etc. as needed on a routine basis
Followup inspection for walk-in shelving and the clothes washer and dryer now located in the kitchen area to be conducted on or about August 21, 2009

Discussed with PIC the need to keep establishment clean to prevent insect harborage conditions in the facility. A cleaning schedule would be a good proactive approach to the cleaning issues in the facility.
Discussed food sources with PIC.
All food hot and cold holding temperatures satisfactory.
Raw meats such as pork, beef and chicken are chopped, and prepared into individual portions. Recommend labeling meats once prepared and portioned.

Initial follow up revealed improvements. Good Job! Thank you.
Owner discussed dish machine alarm with service company. Service company gave owner a written statement(see file) that indicated that an alarm wasn't required. Health Department will contact the service company and clarify any misinformation.
Owner has a cleaning company scheduled for a visit in January. At this time, the establishment will be professionally cleaned and the kitchen will be painted. This will help to alleviate cleaning issues in the future.
Thank you for your efforts and for your continued cooperation.
Owner must call Health Department in January to notify that the cleaning service has been in and completed the necessary work.

Please organize the kitchen and store room. Keep personal items separate from food and food contact surfaces. Please thoroughly clean the establishment (including the ice machine-observed mold inside bin).
Establishment is working with TERMINIx to get the pest control problem under control. The health department will contact the pest control company to confirm type and frequency of treatment. Health department will research and distribute information on safe food handling classes taught in Chinese
Follow up is scheduled for approximately 30 days.
