NOTE: You have 6 metal stem food thermometers. They were all calibrated this morning using ice water. The temperatures are recorded in a book. Some read 30 degrees and 32 degrees. It is IMPOSSIBLE to get these thermometers to read below 33 degrees because it is ice water, not solid ice. Usually the water should read 33 or 34 degrees. Be sure to use a large stainless steel pan of ice and water, not a small Styrofoam cup or plastic container. Thank you for the following: accessible hand sinks with soap and towels and signs; thermometers in all refrigerators; 6 metal stem food thermometers for monitoring food temperatures; ALL potentially hazardous foods at correct temperatures; operating the 3 compartment sink with Quatz sanitizer and test papers are available; today's concentration is 300 ppm; all utensils, food equipment, food surfaces, and food containers are clean to sight and touch; employees use aprons, hair restraints and gloves ad needed for ready to eat food handling; there is a vacuum breaker on the mop sink; a clean kitchen, especially considering this inspection was done during lunch at a busy time of the year; no visible signs of pests; chemical sprayers are labeled and store in such a manner that an accidental "squirt" would not contaminate food or a food contact surface; manger and employees have a good command of safe food handing techniques; ALL employees are ServSafe trained - WOW ! Good job ladies and gentleman.
