| This visit was made to conduct a risk based assessment. The Person in Charge was very helpful during the visit. The following issue requires attention: 1. Please take temperatures of the food when it arrives from Good Foods to ensure that the food is at the proper temperature. Hot foods that are time/temperature control for safety (TCS foods) , like meat, cooked pasta, rice, cooked vegetables, etc..., must be received at least at 135°F or above. Cold TCS foods must be received at 41°F or below. The food is delivered between 10-10:30 AM and is served for lunch approximately 2 hours later. Note: - Provided Employee Health Policy Poster and discussed its contents - Please ensure that the concentration of the chlorine solution used to sanitize food contact services is between 50- 100 ppm. Utilize the test strips that you have to confirm this when making a new solution. *Repeat Observations are Subject to Civil Penalty
