Violation: 0470 - Corrected During InspectionCritical Raw ground beef stored over ready-to-eat (RTE) food(tomatoes, etc) in the refrigeration unit. Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
Comments:
Facility is in good shape. Reheat in the morning for food is finished in 1:00 hour. The chili is able to reach 170+ and the hamburgers reach 140+. All previous items corrected and quick action on the on violation noted during inspection.

Replace the cutting board with one that has a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris.

Discard the food at this time and ensure all previously frozen prepared or commercially processed RTE foods are served, sold or discarded within seven days of preparation or by the" use by" date on package. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
