- 0140 - Corrected During Inspection Critical Improper handwashing procedures observed.
Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 10 to 15 seconds seconds and thoroughly rinsing with clean water and properly drying hands. - 0160 - Corrected During Inspection Critical A food employee failed to wash his or her hands after handling raw products with gloves on, the employee only changed gloves.

Facility in good shape. Discussed food tempertures monitoring and keeping logs. Good prevention of bare hand contact.

Violation: 0470 - Corrected During Inspection Critical Raw ground beef stored over ready-to-eat (RTE) food(tomatoes, etc) in the refrigeration unit.
Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
Comments:
Facility is in good shape. Reheat in the morning for food is finished in 1:00 hour. The chili is able to reach 170+ and the hamburgers reach 140+. All previous items corrected and quick action on the on violation noted during inspection.

Violations:
- 1100 - The food contact surface of the cutting board contains cracks and cuts that can not be easily cleaned.
Replace the cutting board with one that has a food contact surface that is smooth and easily cleanable, free of breaks, open seams, cracks, chips, pits, sharp internal angles, corners, and crevices to prevent build-up of food debris. - 1770 B - Observed accumulations of encrusted grease deposits or other soil on the following food contact surfaces: Chicken cooker
Clean and sanitize these surfaces for food contact. - 1770 C - Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: chicken cooker exterior.
Maintain nonfood-contact surfaces of equipment clean. - 3270 - Premises are not being routinely inspected for evidence of pests. The corner where the soft serve machine, and drink machine are located(behinde these units) has some rodent dropings in the floor.
Inspect premises on routine basis for the evidence of pests. . Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
The facility is in good shape. No previous violations to follow up on. The above items need to be corrected as soon as possible. Discussed food handling, cleaning and sanitizing, and handwashing. Observed both good handwashing and glove use. Will schedule inspection for observation of chili preperation and chicken salad preperation.

Violations:
- 0840 - Corrected During Inspection Critical The prepared ready-to-eat (RTE) cooked, diced chicken in the walk-in refer. was not discarded after seven days from the prep. date marked on the package.
Discard the food at this time and ensure all previously frozen prepared or commercially processed RTE foods are served, sold or discarded within seven days of preparation or by the" use by" date on package. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. - 2000 - Corrected During Inspection Single-use drink cups were observed stored unprotected at the milkshake/desert prep. area.
Store in the original protective package(plastic ) to protect from contamination until used.
Violations noted corrected, observed temp./time logs being maintained for cooking and holding temperatures, good job!

Comments:Facility ready to operate, permit issued. Maintain time/temp logs of all refers. and foods on/in the sandwich prep. refer. Take temps. every two hours minimum.
