    Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Have dispenser serviced. Implement manual mixing of sanitizer.

Check on status of prep unit. Repairman checked unit today. Owner has to decide if he will spend money to repair this unit or replace it. Not using bottom of unit at this time & will not use until repaired/replaced. Contact Health Dept. once decision has been made. Follow-up will be conducted at that time.

    Observation: Wings in bottom of prep unit cold holding at improper temperatures.
    Correction: Discard the wings and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Have unit serviced. -- Wings discarded.
