Chlorine sanitizer in dish machine within acceptable range of concentration
  • Kitchenware and Tableware (corrected on site)
    Observation: Cleaned and sanitized utensils not handled, displayed, or dispensed so that the food- or lip-contact surfaces are protected from contamination. Observed soiled utensils hanging on utensil rack alongside sanitized utensils in dish washing area.
    Correction: Handle, display, or dispense cleaned and sanitized utensils so the food- or lip-contact surface are protected from contamination.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station at the @LOCATION@ is being used for purposes other than washing hands. Observed several paper trash items in handwash sink in kitchen.
    Correction: The handwash facility identified above is to be used for washing hands only
  • Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
    Observation: Chlorine sanitizer being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed consentration of chlorine sanitizer solution in wiping cloth bucket was too high.
    Correction: Utilize only chlorine sanitizing solution with concentration betwee 50 and 100 ppm when applying to food contact surfaces.
06/20/2014Routine
Operator will continue to use written daily food temperature logs to monitor cooling of hot and cold ambient products and cold holding every 4 hours in all refrigerators. Operator also agreed to prepare written long term corrective action plan with schedule for completion to include:
1.) Repair/upgrade air conditioning system in kitchen to help assure cooling time and temperature standards can be met
2.) Install 4-6 addtional wire shelves in each of upright refrigerators to allow more air flow around pans when cooling.
3.) Use more shallow hotel pans for cooling ambient cooled salsas and other cold mixtures
4.) Install walk in cooler in rear of facility. Entry door to be from inside kitchen, not from outside.
5.) Fax written food temperature logs to health department 2X/month to address cooling and cold holding temperatures
6.) New 2-door refrigerator to be installed to replace existing one currently out of operation.
