Violation: 0820 A 2 - Critical Repeat Multiple foods in walk-in, and glass reach-in are cold holding at improper temperatures.
Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria.
Comments:
It appears that the air coming from the cooling element is the right temperature, but is not circulating properly. The refrigerator does not appear to be overfilled. Temperatures are sometimes slightly higher during busy times, but not during down time in which the refrigerator is not being opened frequently. Refrigeration maintenance is needed to ensure foods can be held at proper temperatures. Operator called in a service request. Until the reach-in is fixed, potentially hazardous foods need to be held in another unit. The walk-in unit should also be checked; foods towards the top were colder then foods stored on the bottom. Discard foods that have been temperature abused, and are unsafe for consumption. Temperature logs were given to operator to track various food items and refrigeration temperatures.
