Observation: The nonfood contact surface of the traulson holding unit has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: Less than 50 foot candles of light was noted in the food prep area. Several bulbs appear to be burnt out.
Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
- Physical Facilities in Good Repair (repeated violation)
Observation: Condenser unit in walk in freezer appears to have a leak, is not maintained in good repair
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Manager knowledgeable on food safety risk factors and employee health. Employees observed washing hands and wearing and changing gloves during inspection. All foods date marked as required. Using time to hold cold foods within time limits during inspection. Raw and ready-to eat foods stored separately in walk-in cooler and color coded system (trays, tongs in place to prevent cross contamination and identify products. Maintenance schedule in place for cleaning facilities.
- Critical: Handwashing Lavatory*
Observation: There is no hand wash lavatory at the front counter, where food is being handled and prepared, and is preventing routine hand washing by food workers.
Correction: Install an additional hand wash lavatory at the front counter to allow convenient use by food workers. Prior to installing and removing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies. NOTE - HAND SINK WAS NOT OPERATING DURING LAST INSPECTION AND HAS BEEN REMOVED.
- Physical Facilities in Good Repair
Observation: The refrigeration unit in the walk-in freezer is leaking water onto the floor and is not maintained in good repair
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Employees (Kelly, Toby and India) knowledgeable on food safety and proper use and calibration of probe thermometer. All foods date marked as required. Using time to hold cold foods and within time limits during inspection. Maintenance personnel repairing hand sink in front area behind counter during inspection.
- Equipment - Good Repair and Proper Adjustment
Observation: Several of the metal and plastic food storage pans were observed in a state of disrepair and damaged.
Correction: Replace and/or repair the pans to a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability. If unable to repair the pans, replace it with one that meets the specifications of the food code.

Correction:

Observation: Containers on the serving lines of the pan holding cooked potato rounds to which additional product is added are observed soiled
Correction: Clean and sanitize containers at least every 24 hours as long as food pan maintains stored food items in a manner that prevents cross-contamination.
- Floors, Walls, and Ceilings - Cleanability
Observation: cove tile along walk contains an open seam allowing food and grease to accumulate, area behind hand sink in biscut area needs calking, air conditioner units in kitchen have large acculation of dust
Correction: clean these areas and repair or replace as needed to make cleaning possible and easier in the future
