| Serving kitchen is maintained clean and well organized. Multiple CFMs work on site and effectively use the following Active Managerial Controls to promote food safety: * Washing, rinsing, and sanitizing basins are prepared first thing each morning. Sanitizer solutions are routinely tested. * Temperatures of foods are recorded upon receipt and before serving. Facility has process in place for foods that are not at proper temperatures.

Facility is catered by Jeffery's Catering. Certified food managers demonstrate active managerial control of food safety by verifying food temperatures upon receipt of food in the morning, and again immediately before service. Utensils are washed and rinsed in two vat sink and sanitized in a separate container of chlorine sanitizing solution. Please verify the concentration of chlorine sanitizer each time a new batch of sanitizing solution is prepared.
