Staff has been keeping good records of temperatures on all equipment such as coolers and dishwashers. Temperature log shows proper temperatures being maintained. Staff was also viewed taking inventory of canned goods/dry stock. All dairy products viewed in storage are within proper dates.

Viewed staff placing lasagna back into hot hold unit for re-heat during break in lunch service. Staff was viewed measuring internal cooking temperature of lasagna with thin stemmed thermometer probe (189 degrees F).

Food portions were pulled from serve line after initial lunch service. The food was placed in Metro Hot Holding unit for temperature holding until next round of food service. Discussed marked items with manager. Final dishwashing temperature was measured at a minimum of 160 degrees F.
  • Physical Facilities in Good Repair
    Observation: 1) Delfield walk-in cooler has a large buildup of ice on the floor. This appears to be be from outside rather than condensation from inside. The iced floor is creating a hazard for kitchen staff. 2) Glass shelf at serving line appears to be chipped and loose. This creates a hazard from broken glass as well as difficulty in maintaining a cleanable surface.
    Correction: 1) Have maintenance staff repair or find source of water buildup causing ice. 2) Have maintenance replace glass shelves with a more suitable material which will more resistant to breakage and wear.

Butcher Boy walk-in cooler is out of order and is posted as such by manager. All food items have been removed from cooler until repair is made. Staff was viewed measuring cooking temperature of spaghetti sauce with thin stemmed probe thermometer. All dairy and juice are within date. All canned goods are stored with received by date and damaged cans are segregated from service for return. Quaternary sanitizing solution concentration was measured at 200 PPM.

    Observation: Raw foods of animal origin stored over ready-to-eat (RTE) food in the refrigeration unit.Thawing hamburger rolls were stored over milk cartons in walk-in cooler. Rolls were still frozen.
    Correction: Rolls were placed on the lowest shelf underneath other foods on cooler.Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: 1)-Delfield walk-in freezer has a large ice build-up on floor. 2)-New Thermo-Kool walk-in Cooler and Freezer have been set in building for some time, but have not been completely installed/connected for service.
    Correction: Poor repair and maintenance compromises the functionality of the physical facilities. 1)-Check Delfield freezer to see if ice build-ip is coming from an internal or external source. Repair as needed. 2)-New walk-in freezer/cooler should have installation completed for use.
