The purpose of this visit is to conduct a risk factor assessment. Employee health policy in place. Sanitizer observed at acceptable level. Manager and employees demonstrated awareness of their assigned duties during today's visit.
Handouts provided: Updated ORS Interactive, inc address form to obtain your Certified Food Manager Photo Identification card. Thank you. If you have any questions, please call the health department at 703-246-2444.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.

    Correction: Replace gaskets to allow for door seal properly and maintain proper temperature.

**Please fax and provide a copy of maintenance invoice for this walk-in cooler - raw chicken by 12/19/14.
  • Critical: No Bare Hand Contact with RTE Foods (corrected on site)
    Observation: A food employee was observed handling the following ready-to-eat food using their bare hands: observed tostada and burrito being made with barehands.
    Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall use suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods. Discarded.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: raw chicken (44F), raw chicken (44F) in walk-in cooler for raw chicken.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Cooler was at 44F. Maintenance was called immediately.
