Comments:

Corrected by placing back into broaster for 2 minutes and achieving cook temperature of 168 and 173 degrees. Use your thermometers to check these larger breasts-make sure thermometer is inserted so you're checking thickest part. Check in 3 or more places. Talk to supplier to get more uniform size pieces.
0820 A 1 - Critical 1. Baked beans in steam table were 130 degrees. 2. Also, corn on cob is 130 degrees in both drawers. Product cooked at 9:30 am. 1. Corrected by reheating >165 degrees (170 degrees) and placing into hot hold. 2. Recommended manager to discard pieces left after 1:30 pm. 0220 - Corrected During InspectionCritical Observed open drink cup on prep surface and open milk carton (1/2 pint) in storage area. Corrected by discarding open drinks. If employees are allowed to have a beverage while working, it must be in a covered cup with a straw and handled in a manner that does not contaminate hands or food.
0700 - Corrected During InspectionCritical Several large chicken breasts were undercooked (125 degrees) upon completion of cooking process. Corrected by placing undercooked pieces back in deep fryer until >165 degrees. Batches of chicken are cooked with large breasts in with wings, legs and smaller pieces, the breast size varies quite a bit as well. Recommend cooking breasts alone in 1 batch-must check temperatures of several large pieces-check thickest portion of piece as demonstrated.
1890 - Critical Employee "rinsed" chicken wash container and pan in mop sink before reuse. Correct by washing dirty pans and utensils in 3 vat sink using wash, rinse, sanitize, air dry procedure after use/before reuse.

Comments:
Investigation of complaint received 10/15/07 alleging that on 10/14/07 employee used bare hands to "smooth out"/rearrange cooked fish in hot holding unit and that (at 7:30 p.m.); counter, floors and dining tables were dirty with food and trash all over. Spoke with manager who was working at the time of the complaint but says no one complained to him or other employees yesterday. They were very busy until about 7 pm and were short 1 person so dining room may not have been cleaned as often as usual but manager and other employees say it wasn't really very messy. At the time of this investigation, the dining area is reasonably clean. Also discussed report of bare hand contact with manager. During this investigation employees used utensils and single use gloves as required-the fish hot holding area is very hot and fish is >162 degrees on the surface. Manager will make employees aware of this complaint.

Investigation of complaint alleging that on 10/5/07 at approximately 11:30 a.m. customer alleges that restaurant was not clean-buns and french fries on floor, baseboards by drink machines encrusted with syrup; columns near floor are dirty. Spoke with manager who was not aware of the complaint. The restaurant is clean today-very small amount of tea splashed on floor near drink self service area. Manager came to work about 12:30 p.m. on 10/5/07 and isn't aware of any unusual problems that day.
