Main supplier is Ferraro Foods. Chicken and steak for sandwiches are only raw proteins cooked. Pasta and sauces normally made/used daily. If any left over, food will be date marked. Discussed datemarking requirements. Many foods are prepared and frozen. No menu item is offered undercooked. Discussed employee health. Form 1B has been reviewed and signed by employees. Discussed washing of vegetables in sanitizing basin of 3 basin sink. Dishmachine should be run 3-4 times to reach required 120 degree wash temperature. Demonstrated calibrating a thermometer.

Main supplier is Ferraro Foods. Pasta and spaghetti sauces are normally cooked daily and not held over for next day service. Mussels and clams are pre-cooked, frozen. Scallops are received frozen/raw. No scallops in facility at time of inspection. Most foods are held frozen and thawed in small quantities for daily service. Discussed cooking of steaks and hamburgers. Owner stated that both are cooked to 160 degrees and will not be served rare or undercooked. EHSS requested that owner check with supplier as to whether the steaks are whole muscle or pinned or injected. Recommend checking dishmachine sanitizer every morning prior to using dishmachine. Machine was not in use at the time of the inspection and sanitizer was low. A new bottle of sanitizer was installed and the pump primed and sanitizer was meeting required levels. Discussed washing of fruits and vegetables.

    Observation: Food employees are not informed of their responsibility to report to their PIC information concerning their health and activities as they relate to diseases transmitted through food.
    Correction: PIC is to advise employees of their responsibility to report in accordance with law information concerning their health and activities as they relate to diseases transmitted through food. EHSS provided and discussed requirements for training employees and provided copies of Form 1 B to use for training. Owner had a copy of OEHS guide to employee health for use in making decisions when employees report symptoms and illnesses of concern.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Observed no means to verify that employees have been informed of their responsibility to report to the PIC certain symptoms, diagnosed illnesses and exposures associated with foodborne illness. Observed OEHS Employee Health Guidelines present.
    Correction: Recommend documenting employee health training. EHS provided Form 1B. PIC had all employees read and sign Form 1B during inspection.
  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: Observed in use open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. Observed coffee cup stored on prep table.
    Correction: Recommend that employees drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles. Employee discarded drink.

    Observation: Observed employees working in the food service area without proper hair restraints.

    Observation: Observed meat marinara sauce hot holding at improper temperatures
    Correction: observed at 110 F. PIC stated this was reheated on the stove at 9:30am and had been hot holding for 1 hour.
