Correction: Store food where it is not exposed to splash, dust, or other contamination to prevent contamination.

Observation: A condensate drain line servicing walk-in freezer was emptying liquid waste directly onto the ceiling of the walk-in freezer. Ice has built up on ceiling of unit, as well as around the condensation piping.
Correction: Repair/Relocate the condensate drain line to prevent liquid waste discharge onto the floor surface.

PIC stated that plumber has been called regarding mop sink clog, and that a floor drain will soon be installed under 3-vat sink. Reminded PIC to remove all flow devices from within mop sink area to prevent back flow issues.

Observation: Floors under shelving in storage room in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner. Correct within 5 days and at a frequency to prevent build up of debris under shelving.

No evidence of cockroaches or store bought bait stations being used. Receipts from the exterminator are sent to the corporate office. Health Department will ask the corporate office for a copy of the most recent visit from the exterminator. No evidence of the frappe machine leaking. Discussed cleaning routine of the machine with the PIC. Machine is thoroughly cleaned weekly. This includes flushing the drainage tubes. All ventilation systems seem to be operating normally. The systems were cleaned this month (November) and the fire suppression system was inspected in August of this year. The filters on each of the ventilation systems do have an accumulation of grease. PIC stated that they were cleaned nightly. May need to adjust the cleaning schedule to include 2 cleanings per day to reduce the amount of grease and therefore reducing the risk of fire and contamination.
