    Observation: Observed 2 food handlers not washing for a minimum of 20 seconds (proper method discussed, corrected onsite)
    Correction: -ALL food employees shall wash their hands in the following manner:
    1. remove and discard used gloves,
    2. turn on warm water at the hand sink,
    3. rinse hands/arms with warm water,
    4. lather hands/arms with soap and scrub for at least 20 seconds,
    5. rinse hands/arms with warm water, and
    6. Immedeately follow the cleaning procedure with thorough drying
    *To avoid recontamination food employees may use disposable towels to turn off the water at the hand sink
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food item(s) were measured at improper temperatures: milk in glass display refri. (milk was discarded, yougurts prepared this morining were moved to another unit)
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below.

This visit was made to conduct a complaint inspection regarding a complaint received about a chemical odor in the restaurant. At the time of the visit there was no odor observed in the restaurant dining area nor in the kitchen. The Person in Charge informed me that they conduct regular cleaning of the establishment and at times spray the dining area with Febreeze but not with any other chemicals.
There was water dripping from a vent from the HVAC system in the dining area but repairs were being done at the time of the visit and there was no smell associated with this. A walk through of the entire restaurant and the outside area was conducted with the Person in Charge and there was no indication of any other issue.

This visit was made to conduct a routine food safety evaluation.
A 'Big 6' poster was given and discussed.
Check the front counter display throughout the day to see if the colder setting will allow it to maintain a temp of 41 degrees F or less. If not, it will need to be repaired. Please call me later today or tomorrow to let me know the status.

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: eggs on ice and items in the front display including milk, and yogurt.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. (Eggs were used within 4 hours, and items in the fridge were moved to another refrigerator. The refrigerator was operating at 38 degrees F this morning according to their temperature log. It was turned to a colder setting and will be monitored to ensure it maintains a temp of 41 degrees F before it is used.)

Repair the front display fridge so that it maintains a temp of 41 degrees F or less. Keep all time/temp control for safety foods in another fridge or on ice until it is repaired.

    Observation: The following food item(s) were measured at improper temperatures: milk beverages in front display fridge at 50 degrees F. (Unit is not functioning to maintain a temp of 41 degrees or less, but was 38 degrees F this morning)
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. (Service fridge so it maintains a temp fo 41 degrees or below. The PIC called the maintenance company during the inspection, and reports that it should be fixed today. Milk was moved to another fridge).

This visit was made to conduct a routine food safety evaluation.
Person in charge reported that air curtains will be installed at drive-through windows before next summer to help deter flies. Some flies are still present in the establishment, though they are keeping up with the cleaning and treatment measures discussed during the last complaint investigation.

10/15/2014Routine
This visit was made to conduct a complaint investigation regarding flies in the establishment. A few flies were observed in the front food prep area, especially near the menu sign. This establishment receives monthly pest control treatment from Paramount, and has UV and sticky fly traps throughout the establishment. The last treatment report from 7/3/2014 (invoice attached to hard copy) shows treatment for flies was received. If problem persists, you may need to increase treatment frequency to bi-weekly.
The drive-through windows in the establishment do not have an air curtain. Small fans can be directed so that air is blowing out of the window, preventing flies from coming in. You should also keep the establishment clean, and free of food debris and soda syrup in the fountain. Trash should be removed promptly. You may also want to add more traps in the front area under the sign (like the discrete tray style trap that you currently have).
