Observed kitchen very clean and well organized. Food workers are knowledgeable and proactive in ensuring food safety through routine temperature monitoring.
Please send evidence of repair to dish machine to EHS no later than 22 January 2016. Once the machine is functioning properly, it is suggested that it be tested each day before it is used to sanitize dishes.
  • Ambient Air & Water Temp Meas Devices, F Scale, Accurate within 3°F (corrected on site)
    Observation: The ambient (air/water) temperature measuring device located in the refrigerator is not accurate in °F.
    Correction: Ambient air and water temperature measuring devices that are scaled only in Fahrenheit shall be accurate to +/-3°F in the intended range of use. EHS provided a replacement thermometer.
  • Critical: Chlorine Sanitizer Solution Concentration based on pH and Water Temp (repeated violation)
    Observation: Observed the sanitizing solution in the dishmachine with a concentration of less than 10 ppm total chlorine. Dishes were observed in the machine.
    Correction: Discontinue use of the dishmachine. Have the dish machine serviced so that it provides a rinse solution containing 50-200 ppm chlorine. Send evidence of service to the EHS no later than 22 January. An employee set up three vat sink for washing, rinsing, and sanitizing of dishes.

EHS suggested designating an area on a lower shelf or cabinet for dented can segregation. Please remember that only certified pesticide applicators may apply pesticides in food preparation and service areas
  • Critical: Conditions of Use / Presence and Use / Restricted Use Pesticide (corrected on site)
    Observation: A can of residential use pesticide was observed in a locked storage cabinet in the kitchen area. Per conversation with CFM, pesticides present in the facility are applied rarely by operators who are not certified pesticide applicators.
    Correction: Because of their toxicity, restricted use pesticides must be applied by a certified pesticide applicator to prevent injury and contamination. EHS DISCUSSED RATIONALE BEHIND REQUIREMENTS FOR PESTICIDES TO BE APPLIED ONLY BY CERTIFIED APPLICATORS. PESTICIDE WAS DISCARDED.

Today’s inspection was to conduct a routine inspection. Thank you for accompanying me through the inspection as your participation allows me to clarify information and identify areas where your processes may need further attention or assessment.
-Dishmachine: Hobart SR24 Chlorine
-Receipt temperature log: EHS reviewed receipt temperature log for catered food. This is catered only facility. Food is received from Mount Vernon High school during the year and South County HS during Summer. Breakfast and lunch are served.
-This location is accessed from separate door from the main building on ground floor.
**Please fax and provide a copy of maintenance invoice for dishmachine by June 10, 2014.
