| EcoLab coming in early July to adjust dispensing level of sanitizer. Until then, add plain water in order to dilute solution levels to 100-200ppm. Turn down prep cooler to ensure proper cold holding temperatures are maintained. When keeping large quantities of food cool, make sure to monitor food temperatures make appropriate corrections. | Complaint #1 - Rocks in food.This complaint was related to peas and dried beans. Frozen peas are not washed and a hard dried pea was passed on to inmate. Two different dried beans are used. One type is triple washed from manufacturer and the other is washed at the Jail Kitchen. As per PIC Mr. Brown occasionally a gravel has made it past the washing process with the dried beans. There is no evidence gravel or foreign objects were deliberately placed in food. Complaint #2 - soiled food trays. Observed the operation of scraping and dishwashing and drying of food equipment. Dish machine is operating properly. A dozen trays were pulled and examined all were free of organics. Two trays had scotch tape on them. Only one of the two trays had tape on the food contact area. Tape is used to attach the special menu card for identification. PIC was shown the tape and will correct this thru better scrapping and monitoring procedures.
