The purpose of today's visit was to conduct a routine inspection.
The following suggestions were made:
1. Continue to monitor the refrigerator temperatures of both the undercounter unit and the salad bar prep unit. I would suggest contacting your refrigeration technician to make sure the units aren't defrosting during the day.
2. Continue monitoring the food temperatures at the salad bar, even though they are being replaced at least every 4 hours, it is still suggested that they be maintained as close to 41F as possible.

Dishmachine: Hobart conveyor, thermolabel verified.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: items in 2dr undercounter refrigerator - ribs 50F, chicken/sausage 49F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. Items were all moved to other working refrigerators, tempereature of unit was turned down although the unit may also be defrosting. Manager will check temperature within an hour and call a technician if it does not drop to 40F or below.
  • Equipment / Good Repair / Operation (repeated violation)
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: 2dr undercounter refrigeator, 50F. 2dr upright glass ref - salad prep, 49F.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. Items from undercounter were all moved to other working refrigerators, tempereature of unit was turned down although the unit may also be defrosting. Manager will check temperature within an hour and call a technician if it does not drop to 40F or below. Salad bar prep ref had been propped open to refill, it was noted that the temperature dropped from 51F to 48F during inspection, manager will also monitor temperature.
  • Physical Facilities Good Repair
    Observation: Observed that the following is not maintained in good repair:
    1. Grout missing from floor around drains.
    2. Caulking is missing, dirty/moldy at handsinks and around 3-vat sink/dishmachine area.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
