The following were discussed with the person in charge (PIC):
1. Handwashing frequency and procedure.
2. Cleaning procedure for equipment and utensils.
3. Recommend establishing cleaning schedule for ice shaver.
4. Recommend replacing thermometer in chest freezer.
5. Recommend wearing hair restraints when preparing shaved ice.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration in 3 compartment sink.
    Correction: Adjust the chlorine sanitizing solution to a level between 50-100ppm.
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided at the hand washing lavatory in the facility.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Re-check inspection for plumbing repair to have hand washing water delivered at 100 degrees or higher. Sink was repaired and delivered water at 128 degrees. PIC Lisa Hester. Sno-cones being served. Observed glove usage and hand washing. Recommend outside door be closed when establishment is operational or proved screen for entire door opening.

    Observation: Observed sanitizer level (chlorine) in 3 basin sink unit less than 50 ppm.
    Correction: Recommend sanitizer level be 50-200 ppm. Corrected to 100 ppm chlorine.

VA. Waste water pumped into tank disposed of in public sewer. Hand sink 104 degrees (previously, water hose being repaired) Opening 4/11/2014 only on weekends and weekdays 4 PM to 8 PM. Summer hours 12 PM to 8 PM. Whipping cream stored in small refrigerator. Discussed food suppliers and distributed information on employee health and food safety.
No violation noted during this evaluation.		04/09/2014Routine
Chlorine sanitizer 50 ppm. Employee health info on site. Recommend installing splash guard between hand sink and 3 compartment sink if used to store clean items or to prepare snow cones. Violations discussed with person in charge.

    Observation: Observed a food employee failed to wash his or her hands before putting on gloves and engaging in food preparation.
    Correction: Recommend instructing food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.
