Comments:
The person in charge (PIC) walked me through the facility explaining the processes in place. Temperature logs are used for record keeping in most of the refrigeration units. The first gelato cooler in the front of the facility is not holding the product at the proper temperature and is currently not in use. Facility appears to be in good working order. All temperatures (food and equipment) are in the required parameters.
