    Correction: Ensure all food employees clean their hands and exposed portions of their arms with a cleaning compound in a lavatory by vigorously rubbing together the surfaces of their lathered hands and warms for at least 20 seconds and thoroughly rinsing with clean water.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: According to the "consume by" date on the commercially processed ready-to-eat (RTE) whole milk and cole slaw in the refrigerator, the milk should have been discarded yesterday and cole slaw discarded 4 days ago.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: The cabinet door under the drink machine was observed in a state of disrepair and damaged.
    Correction: Repair the equipment to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: soda nozzles, ice machine, microwave, dispensing spoons in equipment drawer (corrected), bulk sugar container, coffee machines (corrected), can opener (corrected), juice machine, and knives in equipment drawer (corrected).
    Correction: Clean and sanitize these surfaces for food contact.
