    Observation: Foods located at sandwich preparation unit cold holding at improper temperatures. The unit is functioning properly, but the case is left open for extended periods of time allowing the cold air to escape. The operator stated that when baking bread it becomes extra hot in the area.
    Correction: Keep the case closed as often as possible, especially during times when bread is being baked. Unit's temperature was adjusted and now properly cold holding.
