Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* Observation: The ready-to-eat (RTE) commercially processed deli meat in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Inspection done during very busy lunch service. Person in charge knowledgeable about food safety and answered questions correctly regarding proper sanitizer concentration and employee health. Excellent date marking of ready to eat foods. Excellent cold holding (considering heavy use), hot holding and cook temperatures. Recent food delivery and still in process of stocking foods to keep of WI floor. Discussion about removing cardboard from metal shelving, ice maker maintenance, brighter light bulbs for the walk in refrigeration units, cleaning non-food contact surfaces in the refrigeration units, and handwash sinks for handwashing only.
Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site) Observation: The handwash station at the bakery area and middle kitchen is being used for purposes other than washing hands.
Correction: The handwash facility identified above is to be used for washing hands only. Keep sinks clear so that employees can easily handwash.
