This is follow-up to inspection of 7-9-08. At that time, walk-in refrigerator was not holding potentially hazardous foods at safe temperatures and operator was advised not to use it until PHF could be held there at proper temperatures. Operator said that repair technician had come in to repair walk-in since the 7-9-08 inspection. Today, temperature of walk-in refrigerator is 45, 49, 50 depending on location of thermometer. Probe thermometer was used to take internal temperatures of PHF. Operator showed me invoices where catfish, tuna, and tilapia were delivered and prepped today. Advised operator to ice these products and move to colder unit. Health department permit is suspended due to imminent health threat, after consultation with supervisory staff. Repair technician arrived at 3:30 p.m. to repair walk-in refrigerator. Operator is discarding potentially hazardous foods in the walk-in including rice, potatoes, all prepared sauces and soups, Asian barbeque and any PHF which had been in temperature danger zone overnight. Technician said he adjusted thermostat on unit. Temperature is decreasing . Advised operator that permit is reinstated. Advised to check internal food temperatures periodically. Advised to cool prepared and cooked foods before putting in walk-in, using approved techniques to help maintain a colder walk-in. Advised operator to keep door closed until screen is repaired as there are flies in kitchen.

Advised operator that all critical violations require immediate correction. Operator said that walk-in refrigerator had been out of order for 1 day and was just now back in use. He said that during that time, potentially hazardous foods were taken to restaurant next door and kept at proper temperatures. He said they were not returned until walk-in was operating at proper temperature. During today's inspection, walk-in was at 58 degrees. Most foods were still at or close to proper temperatures. Exceptions to this were the tuna and crabcakes. Operator said the crabcakes were just made. He said the tuna was received on ice from Waterside Seafood at 2:00 and then cut and prepped at the restaurant and put in the walk-in. Operator said he is certain that it has not been long at improper temperatures and will ice it down immediately. Operator has called repair technician. In the meantime potentially hazardous foods have been moved to other units, here and next door at Doc Taylor's. Advised operator to check temperature every 30 minutes in walk-in after it is repaired and take appropriate action as needed.
