Comments:
Food and equipment temperatures appeared to be within the proper temperature ranges at the time of inspection. Hand washing sinks were well stocked. Sanitizer levels were correct. equipment temperature and sanitizer level logs are being kept. Some minor cleaning is needed and will be conducted before the kitchen staff levels for the summer. Date marking is being conducted but can be improved.

Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Violation: 1450 - One of the new Traulsen brand refrigerators is not operating properly. Digital read out shows 38, but unit is actually 65 F inside unit. Cafeteria manager stated she is not using this unit for potentially hazardous foods unit repair is made. (Currently being used for pasteurized juices and prepackage peanut butter sandwiches, both nonpotentially hazardous foods.)
Comments:
Violation discussed with Manager. HACCP records reviewed and appear acceptable. Ceiling tiles in dry storage room and back hallway at walk-in refrigerators are observed to be accoustical design, no food prep/food service occurs at these areas. EHS will research regulation and call you about results.

Comments:
All equipment has been installed according to plan review. Electricity and hot & cold running water are adequately supplied to all parts of kitchen. Kitchen operates on approved city water & city sewage systems. This is a pre-opening inspection. Two refrigerators, no foods in these units, were in defrost cycles; ensure that these units are working at temperatures that will keep foods 41 F at all times. No food prep observed today. Minimal amounts of food observed in walk-in units. Manager notes food prep and major food deliveries begin early Tuesday morning. Kitchen appears very clean & has all new utensils. Permit issued.
