    Observation: Per discussion with the Person in Charge, equipment such as tongs is only being cleaned with hot soapy water and rinsed. Equipment is not being sanitized. Discussed proper set-up and concentration of sanitizers solution. PIC agreed to sanitize equipment.
    Correction: Ensure equipment is properly washed, rinsed and sanitized at the end of each breakfast service.
  • Physical Facilities in Good Repair
    Observation: Hole observed in the wall under the sink on the serving line.
    Correction: Ensure physical facilities are maintained in good repair.
