Food suppliers are RRS and Kroger. Ground beef is received raw frozen and is cooked from frozen state. Discussed employee health policy. Recommend obtaining chlorine test strips to ensure bleach mixture remains between 50-100ppm. Observed good handwashing and glove use. Observed overall clean facility.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food

    Observation: Bleach (chlorine sanitizer) being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940. Observed at a concentration above 200ppm.
    Correction: Utilize only chlorine that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces (between 50-100ppm). Corrected to 100ppm.

Food supplier is Richmond Food Service. All proteins come precooked, all milks & eggs are pasteurized. Discussed cooling, and reheating for immediate service. Discussed & reviewed employee health policy, observed information posted. Recommend keeping milk container out for shorter amount of time at snack time or only providing classrooms with needed amount of milk for each child. Observed hair restraint, proper glove use, air drying of clean dishes, date marking, and overall clean kitchen.

Quat sanitizer - 250 ppm. 3 compartment sink 112 degrees from faucet. Not being used during time of inspection. Only raw food cooked in establishment is ground turkey from frozen state. All other food is pre-cooked. Food heated and served. No violations cited.

Quat sanitizer 200 - 250 ppm. Wash basin temp 90 degrees, not actively in use. Recommend adding hot water when washing for a minimum of 110 degrees F. Wash basin temperature reached 110 degrees from tap. Discussed need for self-closures on staff bathroom door, not caught during plan review and therefore not cited during inspection. Please complete within 90 days. Employee health info posted and form 1-B signed. Additional copies given to director for staff that fill in. Recommend providing hot water at mop sink for more effective cleaning of floors.

    Observation: Observed ready to tuna salad and bologna not date marked.
    Correction: Recommend date marking ready to eat potentially hazardous foods with the date prepared and discarding after 7 days to prevent substantial growth of potentially hazardous bacteria such as Listeria Monocytogenes.
  • Non-Food Contact Surfaces (corrected on site)
    Observation: Observed the following non-food contact surface in need of cleaning: drying rack.
    Correction: Recommend cleaning as often as needed to prevent the accumulation of soil and dirt.
