| This visit was made to conduct a pre-opening inspection. The trucks wastewater will be disposed of at the commissary (in mop sink). All equipment and utensils will be washed, rinsed, and sanitized in the commissary's 3 comp. sink. Walk-in cooler is large enough to accommodate use as a commissary. The operator will work in the kitchen before the restaurant operates. Hot water heater infor is being emailed to me.
