  • Critical: PHF(TCS) Received Hot at 135°F or above (corrected on site)
    Observation: Hot food is received at inadequate temperatures (empanadas received at 2:30 pm. Receiving temperatures were 105.1F -100.7F. Spoke with supplier regarding transportation method, manager will use/discard all empanadas by 6:00pm)
    Correction: Potentially hazardous food (time/temperature control for safe food) that is cooked to a temperature and for a time specified under 3-401.11, 3-401.12, and 3-401.13 and received hot (for example, catered meals to a serving kitchen or satellite operation) shall be at a temperature of 135°F or above.

This visit was made to conduct a routine food safety evaluation.
An information sheet for vomiting and diarrhea clean-up kits was given and discussed.
Items with temperature control for safety foods like cooked vegetables, meats, dairy should be kept at or below 41 degrees F.
Establishment is very clean and the person in charge is very knowledgeable. Great job!

  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: empanadas with ground beef in display case.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. (Items will be used or discarded within 4 hours. Case was turned down to 40 degrees and had reached 41 degrees by the end of the inspection).
  • Sanitizer Test Kit Required (corrected on site)
    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: A chlorine test kit or other device that accurately measures the concentration in ppm (mg/L) of sanitizing solutions shall be provided. (I gave the person in charge a few test strips left in my container with the color chart.)
  • Conditions of Use/Manufacturer's label, Conditions of Certification (corrected on site)
    Observation: An individual at the food establishment is applying a pesticide without a current VDACS Pesticide Applicator certification and/or is applying a pesticide in violation of the manufacturer's label. (Observed can of fly insecticide stored on the food storage shelf that the person in charge reported is used in the kitchen for fruit flies)
    Correction: Individuals applying pesticides in a food establishment must have a current VDACS Pesticide Applicator certification, and must apply pesticides in a manner that is consistent with the manufacturer's label. (Consider using fly traps instead of spray).

This visit was made to conduct a pre-opening inspection.
Note: The 2 GE freezers have been replaced with 2 True upright freezers.

Recommend issuance of Health Department permit. Okay for C/O.

06/16/2015Pre-Opening
This visit was made to conduct a pre-opening inspection. The following items require correction:
1. The 2 GE chest freezers are not commercial grade and shall be replaced w/NSF or ANSI equivalent freezers. Submit specification sheets prior to purchase for approval.
2. The 2 Tankless heaters have been installed without prior approval. Make: Rinnai Model: RL94. AHD will calculate recovery rate of water heaters to determine if they are sufficient in size. If sufficiently sized, new heaters sufficiently sized will be required prior to approval from AHD.
3. Provide indirect drainage for 3-compartment utensil washing sink.
4. Rest-room ceilin gtiles are not approved for use. Replace with tiles constructed of a smooth, durable, and easily cleanable surface.
5. Rest-room door is not self closing and shall be properly installed.
6. Seal prep table to wall.
