Two containers of raw ground beef were stored directly above raw cucumbers and green peppers in the walk-in refrigerator. Feta cheese was 44°F, cooked beef was 46°F, and cooked garbanzo beans were 45°F in the cooks line cold top refrigerator. The final sanitization rinse contained less than 50 ppm chlorine at the dish surface, in the automatic dish machine. Two unlabeled chemical spray bottles were present on the chemical storage racks. The bulk pinto bean, salt, sugar and lentil bean containers in the food preparation area were not covered. Three bowls of spices on the top rail of the cooks line cold top refrigerator were not covered. The metal shelving in the walk-in refrigerator was heavily rusted. A non-commercial grade plastic box was being used to store chopped lettuce in the walk-in refrigerator. A non-commercial grade food processor was present on the food preparation table shelf. A food preparation table with a wooden surface was being used for meat preparation during the inspection. The bulk flour pail lid in the preparation area had a large hole melted in the lid. The walk-in refrigerator door gasket was cracked. The automatic dishmachine drainboard wall caulking was damaged, and was not smooth and easily cleanable. The floor mixer bowl and mixing hook were soiled with food debris. The exteriors of the automatic dishmachine chemical buckets and chemical supply lines were soiled with grime and debris. The pre-rinse sprayer handle was soiled with grime. Cans of fava beans on the dry storage shelves were soiled with dust. The light switch on the exterior wall of the walk-in refrigerator was soiled with grime. The oven ventilation hood filter screens were soiled with greasy dust. The top of the fire suppression system tank was soiled with grime. The cold top refrigerator door gaskets were soiled with food debris. Several of the bulk ingredient containers in the food preparation area had scoops with no handles. The wall caulking was not smooth and easily cleanable on the cooks' line handsink, the warewashing area handsink, and the men's and women's restroom handsinks. The wall corner between the three-compartment sink and the mopsink was damaged and the corner trim was not sealed. The floor material was heavily worn in all of the high traffic areas throughout the kitchen. A hole was present in the wallboard to the left of the cold top refrigerator. The wallboard was damaged above the sinks in the men's and women's restrooms.
