Employees were observed not hand washing when required (before donning gloves).
An employee touched ready-to-eat celery with bare hands.
Potentially hazardous food products (shredded beef) were not rapidly cooled from 135�°F to 70�°F within 2 hours and from 70�°F to 41�°F within an additional 4 hours.
Potentially hazardous food products (beans) were not rapidly reheated to 165�°F or higher within 2 hours.
Potentially hazardous foods were received and/or held at temperatures greater than 41�° F during cold storage.

Blue cheese and fetta on the cook line cold top were 46�°F. Lettuce in the bin above the salad prep area was 48-54�°F.

A dented can of raspberry preserves, a dented can of chocolate sundae sauce, and a dented can of potatoes were stored with wholesome cans in the dry storage area.
Employee beverages were stored above customer silverware in the expo area.
Shredded cheese on the back prep area cold top was 47�°F. A pitcher of ranch dressing was 60�°F, a squeeze bottle of dill sour cream was 45�°F, and sliced tomatoes wee 45�°F on the cook line.
The dish machine failed to provide 50-200 ppm chlorine residual after the final rinse.

Ranch dressing was 55�°F on the cook line. It was being held in a 34�°F refrigerator. Corrected on site.
