Cooked beef, cooked chicken, boiled shrimp and two pans of rice were found cooling in deep pans and some of the pans were covered with lids or saran wrap in the kitchen reach-in refrigerator next to the kitchen microwaves. The food had been cooling in the reach in refrigerator approximately for 4 hours and had not reached a temperature of 70°F. 6/27/13 Beef patties found cooling in the cold top refrigerator ext to the microwave measured 68°F. The employees stated the patties had been cooling for 3-4 hours. 8/2/13 All violations were corrected. Raw marinated shrimp was observed cold holding at 55°F in the cold top refrigerator next to the kitchen microwaves. 6/27/13 The following food items were found cold holding between 44°F and 55°F in the reach in refrigerator across from the kitchen grill; marinated shrimp 45°F, meatballs 44°F, crab 55°F, tripe 48°F, beef tendons 48°F and grilled chicken 48°F. Fried egg rolls and fried tofu sitting in a basket next to the fryers were 80°F. 8/2/13 All violations corrected.
The back kitchen hand sink had a bowl and several towels stored in it. A large pot of beef broth was tested at 85°F after 6 hours of cooling. The food did not meet the cooling requirements of 135°F to 70°F with in 2 hours. The mop sink faucet had a shut off spray nozzle on it down stream of an atmospheric vacuum breaker.
