Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. MUST PROPERLY STORE ANY/ALL UNUSED MOPS HANGING UP IN A DESIGNATED AREA.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN AND MAINTAIN INTERIOR OF LOWER CABINETS ON SERVICE LINE, CAN OPENERS IN PREP AREA AND INTERIOR OF ALL COOKING EQUIPMENTS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST DETAIL CLEAN AND MAINTAIN FLOORS UNDER ALL HEAVY EQUIPMENTS/SINKS,IN ALL WALK-IN COOLERS/FREEZERS AND IN ALL CORNERS. ALSO, MUST CLEAN THE INTERIOR OF ALL FLOOR DRAINS.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MUST PROVIDE LIGHTING AND A SHIELD TO THE WALK-IN FREEZER IN THE STORAGE AREA.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN CEILING TILES-REMOVE FOOD SPILLS IN PREP AND ON SERVICE LINE AND CLEAN WALLS UNDER 3-COMP. SINK IN PREP AREA.
