OBSERVED SINGLE SERVICE ITEMS IE. SPOONS, FORKS IMPROPERLY STORED. INSTRUCTED TO STORE INVERTED (HANDLE UP) SO STUDENTS TAKE THE HANDLE AND NOT THE PART WHERE THEY EAT FROM.
Use dustless cleaning methods.OBSERVED CEILING FANS DUSTY AND IN NEED OF CLEANING IN THE LUNCHROOM. INSTRUCTED TO CLEAN.

All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL DRIED FOOD STORAGE CONTAINER IN KITCHEN.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPLACE BROKEN GASKETS ON PREP REACH IN COOLER DOORS.
All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN-SANITIZE BOTH GREASE TRAPS UNDER 3PART SINK AND DISH MACHINE.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST CLEAN FLOORS, UNDER DISH MACHINE IN KITCHEN AND THRU-OUT MOP CLOSETS AND BOILER ROOM.
The walls and ceilings shall be in good repair and easily cleaned. MUST REMOVE PEELING PAINT; THRU-OUT MOP CLOSETS, SOME WASHROOMS AND HALLWAYS, WHERE NEEDED; ALSO REPAIR WALLS INSIDE SOME MOP CLOSETS.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. MUST PROVIDE ADEQUATE LIGHTING IN SOME MOP CLOSETS.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST REPAIR BROKEN FAUCETS WHERE NEEDED INSIDE WASHROOMS THRU-OUT PREMISES.
