All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. No thermometers inside employees and 6th floor coolers. Instructed manager to provide thermometers for all coolers.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The following not clean- interior of 1-compartment sink cabinet and prep table shelves with food debris/dust build up. Instructed manager to clean and sanitize all unclean equipment.

All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOOD (ICE) NOT PROTECTED DURING STORAGE INSIDE OF THE ICE MACHINE. OBSERVED BLACK MOLD GROWTH ON INTERIOR CONTACT SURFACES INSIDE OF THE ICE MACHINES ON THE 2ND - 6TH FLOORS. 5 MACHINES WERE TAGGED HELD FOR INSPECTION. MANAGEMENT INSTRUCTED TO TURN OFF MACHINES, REMOVE ICE AND HAVE INTERIOR SURFACES CLEANED AND SANITIZED. FAX REINSPECTION LETTER TO (312) 746-4240. SERIOUS VIOLATION 7-38-005A.
