All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Interior floors of rear coolers, exterior of grease trap, compressors of coolers- due to dust or debris.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floors around grease trap, along wallbases behind equipment in dishroom must be kept clean.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Oberved a water leak under dipper well at coffee station.

The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Broken/missing floor tiles around middle floor drain, at door entrance to office must be re-surfaced to make smooth/easily cleanable; all drains must be free of debris & kept clean daily.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. Any light bulbs not working must be replaced, at prep areas.

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. STAND UP REACH IN COOLER #38913 DOOR RUBBER GASKETS RIPPED. MUST REPAIR AND MAINTAIN COOLER GASKET.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED GAPS BETWEEN CEILING TILES BY 3-COMPARTMENT SINK. MUST MAKE CEILING TILES CLOSED AND TIGHT FITTED.

FOLLOWING NEED CLEANING: INTERIOR FLOOR OF SMALL COOLER AT FRONT/1ST FLOOR PREP AREA (ACROSS HANDSINK), CONDENSER/FAN GUARDS OF WALK-IN COOLER (BASEMENT), & ROLLING RACKS IN BASEMENT-DUE TO DUST OR FOOD DEBRIS.
THE BOTTOM PIPE OF THE DUMP SINK AT FRONT PREP AREA IS LEAKING, MUST FIX.
FLOORS BEHIND GREASE TRAPS & BIG DRAINS IN BASEMENT PREP AREA MUST BE KEPT CLEAN.
