Sausage at 53.1 F to 59.3 F, approximately 230 lbs, value $330. Instructed that potentially hazardous foods must maintain 40 F or below during storage. Critical citation issued 7-38-005(A). Manager voluntarily denatured and discarded.
Deli meats in display case not labeled or dated. Instructed to date all loaves of deli meats within 5 days of use when seal is broken. Establishment bags ice on premises. Instructed to have establishment name and address printed on all bags.
Thermometer not provided for several display coolers. Instructed to have thermometers conspicuous inside all coolers.
Light bulbs not shielded in walk-in coolers or provided with end caps on bulbs in meat display case. Instructed to install shield on bulbs in coolers and install shields/end caps above meat display cases.

Observed live gnats on premises in bakery area thru-out approximately 30 plus, on soiled towels in rear dock area and houseflies in rear dock area-approximately 20 plus. Instructed to remove all live activity and have licensed pest control service premises and provided service invoice. Serious citation issued7-38-020. Instructed to keep all garbage containers covered, install air curtains or keep over head door closed when not in use and/or install blower to keep flies out.
